Chef’s Table Assistant Manager/Sommelier
£31,000 per annum plus service charge
45 hours per week, working 4 or 5 days
This is an exciting opportunity to join an established, passionate team at a truly special destination restaurant. Chef’s Table by
Josh Barnes offers an intimate fine-dining experience set within the breathtaking surroundings of the Swinton Estate in the
Yorkshire Dales.
Working closely with Chef Josh Barnes—renowned for his innovative, produce-led cooking and estate-to-plate ethos—you will play a
key role in delivering a world-class guest experience. Josh’s menus are shaped by seasonality, sustainability, and foraged
ingredients from the estate, creating a constantly evolving and immersive dining journey.
With just 12 seats per service, this role is as much about storytelling, hospitality, and connection as it is about wine and
service excellence.
Key Responsibilities
* Act as Sommelier, curating and delivering an exceptional wine experience
* Host and manage the Chef’s Table guest journey from arrival to departure
* Deliver warm, polished, and confident table-side interaction
* Manage wine ordering, stock control, and gross profit management
* Maintain a strong understanding of financial performance related to beverages
* Uphold the highest standards of service, presentation, and professionalism
* Work closely with the kitchen team to ensure seamless service
* Act as an ambassador for the Swinton Estate and Chef’s Table ethos
