Reporting to the Head of Commercial Operations, you will manage the Food and Beverage leadership team, working closely with senior stakeholders to ensure the department delivers exceptional guest experiences, while meeting key commercial and operational goals.Key duties will include:CommercialContribute to the creation of departmental budgets and effectively manage them throughout the year to ensure effective use of resources and deliver income targets.Strive for sustainability and efficiency, reviewing resources and efficiencies while maintaining consistently high service levels.Pro-actively contribute to the development of opportunities to grow daily revenue with a specific focus on supporting up-sales and spend per head targets.Lead operational management of all food outlets on the estate to ensure all targets are met - includes sales growth, minimizing wastage and developing efficiency within teams.Monitoring the management of stock in stores - food and disposables.Using our payroll management system to optimize labour deployment and cost controlsGuestTo provide exemplary guest service and to ensure there is an excellent welcome for all visitors using the F&B facilitiesEnsure and maintain consistently high standards of visual presentationMonitor guest feedback data to continually identify and implement ideas to improve and develop the guest experience across the department.PeopleLine management responsibility for the Departmental leadership team, and their teams, conducting performance reviews and providing full coaching and development support to the team.Lead the delivery of seasonal staffing plans and schedules and focusing on key efficienciesTrain and develop team in line with agreed standards and processes to ensure high levels of customer service across all areas of responsibility with particular focus on implementing our guest service training program.'To lead the departmental duty manager Rota, working with the Kitchen manager and Product managerProductLead and build relationships closely with the Product manager and Kitchen manager to develop menus which are relevant to the business modelPlan for future seasonal menu change and corporate service deliveryHealth and SafetyAuditing all food and beverage units.HACCP compliance, monitoring the completion of food safety checks, health and safety checks and adhering, taking remedial action or escalating as required.Ensure the highest standards of cleanliness of the Food & Beverage outlet are maintained and recorded, and that food hygiene standards are in accordance with food preparation regulations, and that the licensing act and due diligence are adhered to.Own the creation, review and record keeping for Risk Assessments and Standard Operating Procedures for the departmentAbout youMinimum of 3 years’ experience in a lead line management roleExperience of mentoring and coaching line managers in a Food & Beverage leadership roleDemonstrable experience of developing and delivering exemplary customer service training needs to a varied workforceExperience of managing an environment that ensures guest safety through procedures, programs and instilling a safety culture.Knowledge of Health and Safety regulations and experience of implementing and monitoring safe working practices.
