Summary
Job Title: Apprentice Commis Chef (Hybrid Kitchen - Dine in & Jamaican online orders for delivery
Location: Barbycue, 8a Queen's Yard, London E9 5EN
Working Hours: 30-40 hours per week, typically 5 days out of 7, including evenings and weekends -
Apprenticeship Standard: Commis Chef (Level 2) Apprenticeship
Apprenticeship Duration: 12-18 months, depending on the individual and training provider.
Salary: Competitive, in line with the Apprenticeship Minimum Wage, with potential for increases based on performance and progression.

The Opportunity:
Are you passionate about food and eager to kick-start your culinary career in a diverse and exciting environment? We are looking for a highly motivated and enthusiastic Apprentice Commis Chef to join our skilled kitchen team. This isn't just any chef apprenticeship; you'll gain invaluable experience across two distinct catering operations: the fast-paced, high-volume production of our Jamaican ghost kitchen and the traditional cooking and service of our pub menu.
This is a fantastic chance to learn from experienced chefs, gain a nationally recognised qualification (Commis Chef Level 2), and develop a broad skill set that will set you up for a successful career in the culinary industry.
What You'll Learn & Be Responsible For (Key Duties):
Under the guidance of our Head Chef and senior kitchen team, your responsibilities and learning will include:
Food Preparation: Assisting with the preparation of ingredients for both the Jamaican ghost kitchen menu (e.g., marinating meats, chopping vegetables for curries, preparing rice and peas) and the pub menu (e.g., preparing garnishes, cutting proteins, prepping side dishes).
Cooking Techniques: Learning and practising a wide range of cooking methods, including:
Specific techniques for Jamaican cuisine (e.g., slow-cooking, grilling jerk, preparing authentic sauces).
General kitchen techniques applicable to pub food (e.g., frying, roasting, sautéing).
Recipe Adherence & Consistency: Following recipes meticulously to ensure consistent quality, taste, and portion control for both brands.
Plating & Presentation: Assisting with the final plating of pub dishes and ensuring the correct, secure, and appealing packaging of ghost kitchen orders for delivery.
Food Safety & Hygiene: Maintaining the highest standards of food safety, hygiene, and cleanliness in the kitchen at all times, including proper storage, labelling, and waste management.
Stock Management: Assisting with receiving deliveries, stock rotation, and maintaining inventory levels to minimise waste.
Kitchen Organisation: Keeping work areas clean and tidy, assisting with dishwashing and general kitchen maintenance.
Teamwork: Working effectively and collaboratively as part of a busy kitchen brigade, supporting other chefs as needed.
Time Management: Developing speed and efficiency to meet demand during peak service times for both dine-in and delivery orders.
Compliance: Adhering to all health and safety regulations.
What We're Looking For (Skills & Qualities):
A genuine passion for food and cooking.
Eagerness to learn and develop new culinary skills.
A positive attitude, strong work ethic, and reliability.
Ability to work well under pressure in a fast-paced environment.
Good communication and teamwork skills.
A basic understanding of kitchen hygiene and safety (desirable but not essential, as training will be provided).
Flexibility to work shifts, including evenings and weekends.
No prior experience is necessary, just a strong desire to learn and a commitment to completing the apprenticeship.
Must be 16 years of age or over.
