Summary

Job Title: Commis Chef (Hybrid Kitchen - Dine-in & Jamaican Online Orders)
Location: Barbycue, 8a Queen's Yard, London E9 5EN

Working Hours: 30-40 hours per week, typically 5 days out of 7, including evenings and weekends.

Salary: £13.85- £16.00 per hour, depending on experience and performance.

The Opportunity
Are you a passionate and skilled Commis Chef looking for a unique and challenging opportunity to develop your culinary expertise? We are seeking a highly motivated Commis Chef to join our dedicated kitchen team. This isn't just any chef role; you'll gain invaluable experience across two distinct catering operations: the fast-paced, high-volume production for our Jamaican online orders and the traditional cooking and service for our dine-in customers.

What You'll Be Responsible For
Under the guidance of our Head Chef and senior kitchen team, your responsibilities will include:

Food Preparation & Production: Efficiently preparing ingredients and executing dishes for both the Jamaican menu (e.g., marinating meats, chopping vegetables for curries, preparing rice and peas) and the pub's traditional American menu (e.g., preparing garnishes, cutting proteins, prepping side dishes, executing dishes from mise en place).
Cooking Techniques: Applying a wide range of cooking methods with precision, including:
Specific techniques for authentic Jamaican cuisine (e.g., slow-cooking, grilling jerk, preparing traditional sauces).
General kitchen techniques applicable to the pub's menu (e.g., frying, roasting, sautéing, grilling).
Recipe Adherence & Consistency: Consistently following recipes and specifications to ensure uniform quality, taste, and portion control across all dishes for both brands.
Plating & Packaging: Expertly plating dine-in dishes to high standards and ensuring the correct, secure, and appealing packaging of online orders for efficient delivery.
Food Safety & Hygiene: Proactively maintaining the highest standards of food safety, hygiene, and cleanliness in the kitchen at all times, adhering to all HACCP principles, proper storage, labelling, and waste management. You will be expected to contribute to maintaining our Level 3 Food Hygiene standards.
Stock Management: Assisting with accurate stock rotation, inventory control, and receiving deliveries to minimise waste and ensure smooth operations.
Kitchen Organisation: Maintaining a clean, tidy, and organised section/station, and assisting with general kitchen maintenance and dishwashing when required.
Teamwork: Working effectively and collaboratively as part of a busy kitchen brigade, supporting other chefs and ensuring smooth service flow.
Time Management: Demonstrating excellent time management and efficiency to meet demand during peak service times for both dine-in and delivery orders.
Compliance: Ensuring strict adherence to all health and safety regulations and internal kitchen policies.
What We're Looking For (Skills & Qualities)
Proven experience as a Commis Chef or similar role in a fast-paced kitchen environment.
Essential: Must hold a valid Level 3 Food Hygiene Certificate.
A genuine passion for food, culinary excellence, and a strong desire to further develop skills.
Ability to work autonomously and as part of a team under pressure.
Excellent communication and organisational skills.
A proactive attitude, strong work ethic, and reliability.
Flexibility to work shifts, including evenings and weekends.
Knowledge of Jamaican and/or American cuisine is a distinct advantage.
