Lead your designated section with confidence, organisation, and pride - preparing, cooking and presenting dishes to the highest standards, every service, every plate. Maintain impeccable mise en place, ensuring your area is calm, clean and always ready.

Taste, test, and refine - balancing flavour, checking temperatures and polishing presentation. Work closely with senior chefs to bring ideas to life, contributing to menu development that celebrates local produce and Scottish heritage. Minimise waste and champion sustainability in daily prep and production - we do the right thing for our environment and our community.

Support, guide and encourage junior chefs - being a steady, positive influence in their development. Share knowledge generously and give clear, constructive feedback to foster a culture of respect and continuous improvement. Contribute to a team spirit where service feels coordinated, elegant, efficient and fun. Celebrate wins, keep the energy positive and help create a kitchen people love to work in. Embrace the dynamic rhythm of service, adjusting with professionalism and positivity.

Support immaculate housekeeping throughout the kitchen, maintaining the elegance and order synonymous with Taymouth Castle. We do the right thing, impeccable hygiene, and cleanliness in all areas of back of house, food safety, sanitation, and health & safety protocols in line with luxury hospitality standards.

Support additional tasks or changing business needs, approaching challenges with a team-first mindset. Engage positively with team members and guests, contributing to a collaborative, service-driven culture where we believe in having fun, taking pride in attention to detail, remaining flexible and creating memorable experiences.

Monitor stock levels and proper rotation and minimal waste, assist with the inventory, order stock and receive our luxury food and beverage deliveries. Ensure continual product quality standards and procedures are observed daily.

Uphold our exceptional standards while demonstrating passion and flare in the pursuit of service excellence. We respect people, places, and culture and as an Ambassador of Taymouth Castle – spokesperson, advocate, and supporter. Be actively involved in day-to-day operations through observance and collaborating proactively with team members across our wide range of facilities. Contribute to departmental and wider business meetings where necessary.

You can be creative by redefining, creating, and planning something bespoke for people who like to do things differently that makes for a truly unforgettable experience and redefines what service can be.

Based within the castle or at various locations throughout the estate. Although much of your time will be spent indoors, some events may be hosted outdoors. This role can involve prolonged periods of standing, walking, and bending.

One to two years’ experience, in the same or a similar role / and or estate environment, working with a small team. With proven capability in managing a section confidently. A calm, considered, and supportive leadership style - able to mentor others while maintaining high personal standards. Effective communication skills and the ability to work harmoniously in a fast-paced, high-expectation environment.

Excellent decision-making and problem-solving skills, especially under pressure. A results-driven, passionate approach - always striving to elevate quality and do things beautifully. Eagerness for continuous learning, development and craft refinement. Deliver refined, personalised, anticipatory service with a vision for quality and excellence. Attention to detail with a warm, casual style letting your genuine personality shine through.

Calm, confident and discreet, taking huge pride in your presentation. Exemplary time management and critical thinking skills. Ability to work under pressure to juggle competing priorities with minimum supervision. Adapt accordingly to suit the profile of the business. Ability to adjust working days and hours of work to meet business needs, as and when required and during emergencies or busy seasons.
