About the role:
This roles aim is to manage the back of house food-led catering operation of Nottingham Greyhound Stadium. You will organize and supervise all kitchen and snack bar operations across your site, maintaining high food quality and complying with hygiene regulations. Controlling costs in general and maintaining good staff relations as well as maintaining all legal and company health, safety & HACCP standards, with the support of the Head of Catering.
The remit will encompass all food preparation across your site.
Responsibilities of a Sous Chef (Please see attached Job Description for full details):
Support the Head of Catering in delivering revenue, gross profit and cost targets, including purchasing within agreed budgets and explaining variances.
Oversee catering systems and controls, including stock management, menu planning, allergen compliance, reporting and use of the Indicator catering platform.
Manage food procurement, storage, stock takes and distribution across multiple outlets, ensuring availability, quality and cost control.
Plan and deliver food preparation and service for race day and non-race day events, including kitchen organisation and resource planning.
Ensure all food safety, health & safety, hygiene and HACCP standards are met, documented and maintained in line with company and EHO requirements.
Maintain consistent quality control, portion control and waste management throughout production to protect GP.
Supervise kitchen operations, including cleaning standards and safe working practices across all areas.
Lead, train and support kitchen staff, ensuring compliance with food safety, hygiene and operational procedures.
Assist with staff scheduling, rotas, workload allocation and absence management to meet operational and cost targets.
Liaise with internal departments, external inspectors and authorities, and support the business in preparing for future nutrition and allergen legislation changes.

Qualifications
Level 4 Food Management in food Safety preferred, Level 3 minimum.
Level 3 HACCP (Desirable)

Essential Skills & Experience
Experience as a Chef de Partie in high quality, fast paced operation
Strong understanding in HACCP, Nutrition & Allergens
Good understanding of purchasing systems, technical packages & I.T.
Strong leadership skills.
Excellent communicator
