Job Introduction
Sodexo Live! is looking for a Retail Cellar Manager to take ownership of our retail cellar operation across a large, multi-outlet venue making sure the right stock is in the right place, at the right time, every time. This is a fast-paced, high-trust role where hands-on cellar expertise meets sharp stock control: you’ll drive stock-to-cash reconciliation, stay on top of variance and wastage, and protect both product and profit across race days, major events and peak trading periods.
You’ll work closely with bar managers, retail and finance stakeholders, and the wider Beverage team to keep everything running smoothly planning deliveries, coordinating distribution to bars and private areas, and ensuring cellar readiness for flagship events such as Royal Ascot. You’ll also lead a Cellar supervisor event-day casual workforce, setting clear standards around safety, security, compliance and cellar best practice.
You will work closely with the Head of Beverage to manage and maintain the temporary structures allocated to Cellar, their fit-out and functionality, security and general maintenance for our larger events.

What You'll Do:
- Run the full retail cellar operation across Ascot Racecourse, ensuring every outlet is stocked, supported and ready for race days, major events and functions.
- Deliver tight stock control and reconciliation, owning the stock system, transfers/audits, stock-to-cash checks, and producing event/monthly variance and wastage reporting.
- Protect commercial performance, managing stockholding, gross margin and wastage targets, spotting risks early and putting corrective actions in place.
- Product,manage and monitor performance of Draught Lines to ensure they are appropriately cleaned, performing as expected with minimal wastage and work with the operational and technical support teams to ensure user efficiency when pulling draught product.
- Coordinate inbound deliveries and distribution, planning logistics so the right products (including draught) are in the right place at the right time across bars, restaurants and loge boxes.
- Temporary Structures,work with the Head of Beverage and Head of Retail to ensure the temporary cellar spaces are fit for purpose, well maintained and stocked appropriately ahead of each event, paying particular focus to Royal Ascot.
- Lead and develop the cellar team, line managing supervisors/support and directing casual labour on event days, setting standards and improving ways of working.
- Maintain safe, compliant cellar operations, driving a zero-harm culture, training and records, security and hygiene standards, and ensuring equipment faults are logged and resolved ahead of the next event.

What You Bring:
- Proven leadership in high-volume beverage/cellar operations.
- Strong financial acumen with experience in stock control and reconciliation.
- Proficiency in Microsoft Excel and stock control systems.
- Excellent organisational and people management skills.
- Personal liquor license knowledge is desirable.
- Forklift license (preferred).
- Strong knowledge of wines, spirits, beers, and associated cellar practices.
- Clean driving licence (preferred).
