Role Overview

As General Manager at the Edinburgh International Conference Centre (EICC), you’ll have overall responsibility for delivering an exceptional, market-leading hospitality operation within one of the UK’s most prestigious conference and events venues.

This is a high-profile leadership role where commercial acumen, operational excellence and inspirational people leadership come together. You’ll lead large, multi-disciplinary teams across conferences, exhibitions, banqueting and retail, ensuring Levy’s standards are not only met but consistently exceeded — for clients, guests and partners alike.

You’ll act as the senior on-site leader and a trusted partner to the EICC, driving innovation, financial performance and a culture of pride, inclusion and excellence.

Key Responsibilities

Strategic & Commercial Leadership

  • Own and deliver the overall business strategy for Levy at EICC, aligned to Levy UK & Ireland objectives.

  • Drive revenue growth, profitability and commercial innovation across all food and beverage operations.

  • Lead annual budgeting, forecasting and long-term financial planning, ensuring strong cost control and margin delivery.

  • Identify new opportunities to enhance guest experience, efficiency and sustainability.

Operational Excellence

  • Oversee all hospitality operations including conferences, banqueting, exhibitions, retail and bars.

  • Ensure seamless delivery of complex, high-volume and high-profile events.

  • Maintain outstanding standards of food quality, service, safety and compliance at all times.

  • Champion continuous improvement and operational best practice.

Client & Stakeholder Management

  • Build and maintain a strong, collaborative partnership with EICC leadership and key stakeholders.

  • Act as the senior escalation point for clients, ensuring issues are resolved quickly and professionally.

  • Represent Levy positively at internal and external forums.

People & Culture Leadership

  • Lead, inspire and develop a diverse management team and workforce.

  • Create a culture where people feel valued, supported and empowered to perform at their best.

  • Drive engagement, retention, succession planning and talent development.

  • Champion Levy’s commitments to inclusion, wellbeing and sustainability.

Governance, Safety & Compliance

  • Ensure full compliance with food safety, health & safety, licensing and employment legislation.

  • Embed Levy’s safety-first culture across all teams and operations.

  • Maintain robust controls, audits and reporting processes.

What We’re Looking For
  • Proven General Manager or Senior Operations leadership experience within large-scale hospitality, events or venue environments.

  • Strong commercial and financial acumen, with experience managing complex P&Ls.

  • A confident, credible leader with the ability to influence senior stakeholders and clients.

  • Experience leading large, multi-site or multi-function teams in fast-paced environments.

  • Passion for food, service, innovation and guest experience.

  • Calm under pressure, highly organised and solutions-focused.
