We are a traditional kitchen which prepares dishes from scratch, working with local ingredients as much as possible. We have a history of developing trainee chefs to a high standard that become part of the permanent kitchen team. We specialise in traditional and modern French food, plus a Sunday lunch in an Anglo French restaurant over a traditional Ale house.
Job description
An opportunity to learn and develop craft skills, cooking Anglo-French cuisine from scratch under the supervision of senior staff. You will find yourself engaged with food preparation and service from the beginning. Other responsibilities involve managing and rotating stock; cleaning and record keeping. While always supervised, you can rapidly aspire to run a section.
What will the apprentice be doing?
To prepare fresh food for our customers.
Use fresh produce and local ingredients to craft excellent meals.
Gain an understanding of day-to-day kitchen activities and how you fit into them.
Maintain excellent hygiene procedures.
Carry out cleaning tasks including washing dishes and sweeping.
Assist with stock and inventory management.
As an apprentice, initially you won't have set responsibilities, as you'll learn all areas of the kitchen. This starts with daily prep and desserts and as you progress within the kitchen you will be moved around as you get to learn the menus.
As a team all kitchen staff have duties, which include the cleaning down at the end of service.
The right applicant needs to be eager to learn, passionate about cooking, reliable with a good work ethic and a can-do attitude.
What training will the apprentice take and what qualification will the apprentice get at the end?
To become an apprentice, you must:
be 16 or over
not already be in full-time education
As an apprentice you’ll:
complete a level 2 Production Chef apprenticeship standard
have regular one to one sessions with a dedicated trainer either remotely or through visits to your workplace
learn and train for a specific job
get paid and receive holiday leave
get experience in a real job
study for at least 20% of your working hours
complete assessments during and at the end of your apprenticeship
be on a career path with lots of future potential

Future Prospects
We have a strong record of training and retaining apprentices within the business. All kitchen roles are potentially available. Some staff have also moved on to our sister fine dinning restaurant Melton's, others have also chosen to gain experience Front of House
Skills required
Attention to detail, willingness to learn, and the ability to take on board critical feedback. A calm temperament, team worker, and a good communicator.
Qualifications required
None specific, a passion to work with food.

Things to consider
This job will require working evenings and weekends and long hours including 12 hour shifts often finishing late in the evening (between 10 to 11.15pm). We are in the city centre so parking can be an issue so please think about how you will get to and from work.
Level 2 Commis Chef Apprenticeship Standard
Apprenticeship standards are aimed at developing skills within the Apprentice’s chosen career route, each standard has set knowledge, skills and behaviours required to be successful within the job role. Once the apprentice has completed a minimum of 12 months training and the employer and the regional trainer confirm they have met all the requirements of the standard they will be put through to end point assessment. The end point assessment is independent from the training and includes a variety of assessment methods which test the skills and knowledge of the apprentice to ensure they are fully competent in their role. Each Apprentice will be supported throughout the apprenticeship by a structured programme of teaching, e-learning, face to face training and workplace mentoring; this will encourage and help them to meet the requirements of the new standards and will prepare them for the end of point assessment.
