We’re seeking an Executive Chef for Treehouse Hotel London, where you will take the helm of our flagship dining destination Madera Restaurant, while also overseeing the culinary direction of The Nest, our iconic rooftop bar with 360° views of London, and our in-room dining offering. This is a role with real scale and profile — at the centre of one of London’s most exciting lifestyle hotels.

The Role

As Executive Chef, you will take full ownership of the hotel’s culinary operations, with a particular focus on Madera. You will lead the kitchen brigade, drive creativity, and ensure every dish delivers flavour, consistency, and impact.

Key responsibilities include:

  • Designing and evolving seasonal, innovative menus that reflect the Madera brand while celebrating provenance and guest expectations.
  • Leading and inspiring the kitchen team across Madera, The Nest, and in-room dining.
  • Ensuring consistently high standards — from ingredient sourcing through to execution and presentation.
  • Driving efficiency and compliance across inventory control, maintenance, food safety, and HACCP.
  • Collaborating with Front-of-House leaders to deliver seamless guest experiences across all outlets.
  • Managing kitchen budgets, forecasting, and delivering strong GP control.

About You

  • Proven experience leading a high-volume, high-profile kitchen in a destination restaurant, hotel, or lifestyle venue.
  • Exceptional culinary skills with a deep understanding of seasonal ingredients, flavour, and presentation.
  • A creative visionary, able to design menus that are exciting and commercially viable.
  • A natural leader who can inspire, mentor, and grow high-performing teams.
  • Financially astute, experienced in managing budgets, food costs, and waste.
  • Calm, adaptable, and resilient under pressure, with excellent communication and collaboration skills.
  • Strong knowledge of compliance, HACCP, and food safety standards.
