The Opportunity

We are seeking an exceptional Executive Head Chef to lead our culinary operations at the prestigious Shell Centre in Waterloo. This is a flagship site requiring a highly skilled and inspirational leader with proven expertise in delivering outstanding food services across hospitality, retail, and staff dining.

As the Executive Head Chef, you will take full responsibility for the management of food production and service delivery, ensuring the highest standards of quality, consistency, and customer satisfaction.

Key Responsibilities

Operational Leadership
  • Oversee all aspects of food production and service, ensuring delivery to agreed standards, specifications, and performance targets.

  • Lead and inspire the on-site culinary team, fostering a culture of excellence, innovation, and continuous improvement.

  • Manage stock control, ordering, and compliance with purchasing procedures.

  • Implement and maintain presentation standards across all outlets, ensuring quality and consistency.

  • Drive sales and achieve financial targets in line with budget expectations.

Service Standards & Compliance
  • Ensure timely and efficient service of meals, meeting agreed KPIs and service standards.

  • Conduct daily team briefings, pre-service checks, and regular training to maintain consistency.

  • Proactively respond to customer feedback, recognising excellence and resolving complaints effectively.

  • Ensure compliance with food safety, health & safety, and company policies, including HACCP, COSHH, and audit requirements.

  • Maintain safe and hygienic working conditions across all kitchens and service areas.

People Management
  • Recruit, train, develop, and appraise team members, building a motivated and high-performing workforce.

  • Deliver structured training programmes to ensure compliance, capability, and progression.

  • Hold monthly team meetings and regular reviews to promote engagement and effective communication.

  • Manage rotas, holidays, and workforce planning to maintain operational efficiency.

Financial Accountability
  • Ensure all financial targets are met, including labour, food cost, and stock management.

  • Accurately monitor budgets, expenditure, and tariff pricing.

  • Deliver profitable growth by maximising sales opportunities and maintaining cost control.

  • Complete mandatory stocktakes and ensure accurate reporting of financial performance.

About You

To succeed in this role, you will bring:

  • Proven experience as an Executive Chef or similar senior culinary leadership role.

  • Recognised culinary qualifications (706 1/2 or equivalent).

  • Food Safety (CIEH Level 3 or equivalent).

  • Strong financial acumen and demonstrable experience managing budgets.

  • Knowledge of industry trends, innovations, and best practices.

  • Excellent leadership, communication, and team development skills.

  • Ability to remain calm and effective under pressure.

  • IT literacy and confidence using operational systems.

  • A genuine passion for food, service excellence, and customer experience.
