The ideal candidate should have:
A deep understanding of Indian ocean and other warm water sea fish and shellfish industry, species identification, preparation methods and detailed product knowledge of fish species like Japanese Bream, Lady Fish, Barracuda, Barramundi, Crabs, Travelly, Pomfrets, Indian Mackerel etc
- expertise in Tamil / Sri Lankan scrubbing, de-scaling, cutting and slitting fish, removing bones and fine cutting styles;
- expertise in English scrubbing, de-scaling, gutting and cleaning fish, removing bones and fine cutting styles;
- expertise in Sri Lankan cutting, Bandsaw cutting and making fillets;
- proficiency in handling the tools {fish pliers, fish scalers and all types of knifes including filleting knife, curved knife, short and strong knifes, fish portioning machines, fish skinning machine etc);
- knowledge in labelling;
- expertise in categorizing and displaying fish;
- knowledge in storing, reviewing and ordering stock;
- ability to advice customers as to the products specialty, selection, storing and cooking;
- Knowledge in maintaining hygiene and cleaning;
- no skin allergies; and
- Good communication and customer service skills
