Salary: £50,000 plus service charge

As Executive Sous Chef you responsible for the full food service from 2 separate kitchens. This will entail a variety of menus catering for A la Carte service, set menu lunches, extensive C&B, weddings, bar service, breakfast and room service. It also includes the management of one team of chefs over the two sites ensuring the highest standards are always maintained. There is a separate pastry kitchen looking after the desserts and an extensive afternoon tea business. This is a hands-on role that requires excellent oversight and communication with multiple departments. The kitchen currently turns over approximately £2.5 million per year and we plan to continue to increase this number.

Some key responsibilities include;

Overseeing the preparation of all the dishes within the two kitchens

  • Overseeing the preparation of all the dishes within the two kitchens
  • Issuing clear instructions to the Sous Chefs and ensuring these are distributed and adhered to by all sections of the kitchen
  • Keeping up with industry trends and working with the Executive Chef to create new, exciting, and nutritionally balanced menus to delight our customers.
  • Reviewing the menus with a focus on seasonality.
  • Keeping accurate account of stock including conducting efficient and effective stock take activities.
  • Supporting the Executive Chef in developing a schedule of menus with all required recipes and allergen information
  • Keeping within the budget set by the Hotel with a focus on pro-active cost effectiveness
  • Maintaining an excellent standard of food quality in all areas
  • Ensuring consistent plating guides are implemented for all menus
  • Ensuring all ordering is accurate and properly rotated
  • Using our preferred suppliers wherever possible
