The luxury 5 star Grand Hotel Eastbourne in East Sussex is looking for a Chef de partie Pastry to join our kitchen team . The Grand Hotel Eastbourne is the only 5 star coastal hotel in the country and one of the leading hotels in East Sussex and the South East. This is an outstanding opportunity for an experienced Pastry Chef to advance their career to Chef de partie Pastry at 5-Star level, producing high quality desserts, bread and patisserie. This position is for the second pastry chef in a brigade of four in the pastry section of our main kitchen.
Overview or Responsibilities- You will at times deputise for the Head pastry chef in his absence and otherwise support him in the efficient running of the section.
- To keep up with professional development in your area of expertise and to strive to attribute to the departmental objective.
- To permanently update your working practice, reduce wastage and use equipment and products efficiently and cost effectively.
- Your role will encompass preparation for a number of F&B outlets, including Restaurants, Room Service, Banqueting, Lounges and ancillary areas.
- To control and report stock levels and ensure they are sufficient for current and anticipated business levels
- To make any possible attempt to attend training courses organised by the Hotel, apply skills and knowledge acquired and train your fellow employees, trainees and apprentices.
- To ensure quality and presentation of dishes is to the highest standardsTo ensure high levels of cleanliness and tidiness not only in own section but throughout the kitchen.
Experience and Attributes
- You should have experience as a Pastry Chef in a similar busy quality operation, preferably in the luxury hotel market .
- Be calm under pressure and have a good command of the English language, both verbal and written.
- Possess a ‘can do’ attitude, attention to detail and be able to use your own initiative.
- Possess Basic Food Hygiene and Level 2 Food Safety Certificate as a minimum.
