Do you want to be part of a fun & exciting team? We are arguably the best smokehouse in the UK supplying the top tier chefs and restaurants with smoked fish.
At Secret Smokehouse, you’ll work directly in and as part of the production team and filleting all the fresh salmon, trout, haddock, mackerel and herring we have arrive each day. To always maintaining high hygiene standards.
7am/8am to 5pm [40-45hrs per week] - NO night shifts.
The filleter/fishmonger/blocksman role here at the secret smokehouse involves being able to fillet to a extremely high standard and to be able to keep up the large quantity of fresh fish being processed at our production unit here in East London. The candidate will need exceptional filetting skills, communication skills and experience.
The candidate will report directly to the General Manager and inform of damaged or unsatisfactory fish that arrives into the premises. Due to us running at high level, hygiene & cleanliness is paramount so will need good team work skills to be able to work with the KP to ensure the block is always left to a high clean standard.
Roles & responsibility’s:
- Excellent knife skills
- Fillet to the high standard to the Secret Smokehouse spec.
- Responsible for high yield fillets at all times
- Ensure block is tidy and clean throughout fish preparation and end of shift
- Work closely with other team members & in particular the KP
- Make sure all knives are sharpened and not damaged [any damaged reported]
- Staff fillet training
- Adhere & be fully compliant with food safety - in particular cross contamination
- Ensure correct chemicals being used when cleaning down - training can be provided
- Manage carcass yield recover
In prodcution you will be trained up and assist the production team:
⁃ Assist in production: curing, smoking, pin-boning, slicing and packing of smoked fish (training provided!)
⁃ Have good communication skills
⁃ Willing to learn
⁃ Work well as a team
⁃ Work in an organised and efficient manner
⁃ Maintaining high hygiene standards
⁃ Punctual

Depending on the age & experience hourly rate vary. Each individual application will be looked at on a case by case and discussed at the interview stage.
