The Bread Factory is London’s leading Artisan Bakery, known for award-winning breads, pastries, and cakes, supplying top-quality products across e-commerce, grocery, food services, and retailers such as our GAIL’s Bakeries nationwide. As our teams grow, we seek our next Senior Baker Developer to join our team.

We Care about a Job Well Done:

Since 1993, we have been champions in traditional baking with the finest ingredients and techniques. We always do things the right way, not the easy way.

We Care about Baking:

At The Bread Factory, all our teams take pride in crafting beautiful, freshly baked loaves, pastries, and cakes. We are all passionate about our products and share knowledge among us all.

We Care about Each Other:

We always act with respect, empathy, and support to our employees, neighbours and customers.

We Care about Community:

We believe in minimising unsustainable practices and reducing waste. While ensuring we continue to provide everyone with nutritious high-quality food.

Every day is different at The Bread Factory, but here are some of the things you will be doing:

  • Translate product briefs and concepts into commercially viable recipes, ensuring alignment with quality, cost, and customer expectations.
  • Manage the test bakery: ordering ingredients, maintaining cleanliness, and ensuring smooth trial operations.
  • Ensure the scale-up process factory trials match approved samples.
  • Conduct capability and feasibility trials.
  • Produce high-quality product samples for internal review and external presentations.
  • Identify and resolve issues in the development process promptly and effectively.
  • Present ideas and findings clearly and accurately to stakeholders.
  • Support the training of production bakers to ensure consistent product standards.
  • Plan and manage resources to deliver development projects to agreed timelines and quality standards.
  • Provide accurate recipe costings and maintain up-to-date documentation.
  • Promote a strong food culture and support food education across the business.
  • Organise and manage product tastings and approvals, including recipe handovers with photos and specifications.
  • Trial new ingredients, materials, methods, and equipment.

Our team tells us you will be a great addition if you have experience in:

  • At least 5 years’ experience in a bread bakery environment, with hands-on involvement in new product or process development.
  • Familiarity with both fresh and frozen bakery processes.
  • Strong working knowledge of modern artisan bakery standards.
  • Relevant bakery qualification (preferred).
  • Ability to translate artisan methods into scalable, factory-ready processes.
  • Excellent communication and interpersonal skills.
  • Strong organisation and attention to detail.
  • Effective time management and ability to meet deadlines.
  • Confident using Excel and other relevant computer tools.
  • Innovative thinker with a passion for bread and awareness of current trends.
  • Self-motivated with good judgement and problem-solving skills.

What’s in it for you:

  • Fresh bread daily to take home to enjoy with family and friends.
  • 50% discount at GAIL’s and 40% off at The Bread Factory & The Flour Station Markets.
  • 25 days holiday + bank holidays
  • Discounts and Savings from high-street retailers and restaurants
