Job Description:
We are looking for a talented, experienced chef with deep knowledge of authentic South Indian cuisine and a flair for Indo-Chinese fusion cooking, while maintaining our existing Tandoori and curry dishes that have been loved by the community for over four decades. You will play a vital role in developing a new, exciting menu that bridges tradition and innovation, and in preserving the classics that built our reputation. This is an excellent opportunity for a passionate chef to contribute to both heritage and growth during a key transition period for the restaurant.
Key Responsibilities:
• Collaborate with management to design a modern, high-quality menu featuring authentic South Indian cuisine, Indo-Chinese fusion dishes, and selected classic Tandoori items and curries, preserving the restaurant’s long-standing heritage while introducing fresh concepts.
• Skilfully prepare and cook a wide range of dishes, including South Indian specialties (e.g., dosa, idli, vada, sambhar), Indo-Chinese favourites (e.g., Hakka noodles, Manchurian, chilli chicken), and traditional Tandoori items and curries (e.g., chicken tikka, lamb rogan josh, butter chicken, naan, etc.) to ensure authenticity and consistent quality.
• Supervise and coordinate daily kitchen operations. Ensure smooth workflow and effective communication among kitchen staff, especially during busy service hours.
• Maintain high standards in taste, presentation, and portion control across all cuisines. Conduct regular quality checks to ensure customer satisfaction and consistency.
• Ensure the kitchen and all cooking practices adhere to health and safety regulations. Maintain a clean, sanitary, and organized work environment at all times.
• Monitor inventory levels, manage stock rotation, and assist with sourcing fresh, authentic ingredients for all cuisines. Minimize waste and control food costs effectively.
• Train and guide kitchen staff on the preparation of diverse menu items, hygiene protocols, portioning, and plating standards. Promote teamwork and continuous learning.
Requirements:
• Minimum 3 years of hands-on experience in South Indian and Indo-Chinese/fusion cooking.
• Bachelor’s degree in Hotel Management or equivalent (required).
• At least Level 2 Food Hygiene and Safety certification or above (required)
• Strong culinary skills and an eye for presentation.
• Creative, adaptable, and passionate about flavour innovation.
• Valid work authorization in UK.
• Newcastle based or willing to relocate
