We are looking for a Catering Team Leader to join us at our new site, HMP Ashfield
This exciting opportunity is well suited to an experienced Chef who enjoys working as part of a committed team. To manage the catering operation within HMP Ashfield, in accordance with all relevant and current regulations, legislation and guidelines.
the delivery of catering services to the establishment and comply with all relevant Health & Safety and Safety Regulations, guidelines. Enabling the efficient management and leadership within the catering within the catering operation in HMP Ashfield.
Key Responsibility
In this role you will be responsible for ensuring the department is well managed. Organising, leading and motivating the catering team and prisoner kitchen workers.
Planing menues in consultation with chefs and kitchen workers, in compliance with the Prison Service Instructions.
Ensuring Health & Safety food Hygene regulations are strictly obsereved and controlled. Ensuring all kitchen workers and staff receive appropriote induction and ongoing training in all aspects of the catering oporation. Maintenance checks of equipment and infastructore are completed, and all equipment is fit for purpose and use. Setting, agreeing and achieving all financial targets and forcasts, keeping financial and administrative records and monitoring expenditure. Monitoring the quality of the product and service provided, setting standards of excelence.
Interacting and leasing with all stakeholders, customers and supliers. Contribute to business development.
Keep abreast of trends and developments in the catering industry, such as menues and customer tastes and management issues.
The responsibility of immplementation of policys internal and external to the establishment such as Health & Safety, local security stratergy (LSS)
Directors rules. Prison service orders and food safety management system (HACCP).
Ensure that staff are managed and supported in line with Serco company procedures, sickness abcensse, proformance management, training and development.
To assist in prisoner movements and searches to and from the kitchen and wings. To ensure the security of foodstuffs can be maintained during delivery. storage and distribution in the prison. To provide hospitality requirements when requested.

- Engage with an annual preformance and development review, ensuring the objectives within the review are achieved (catchups).
- Meet requred attendance and punctuality levels.
- Addhere to reporting sickness in accordance with the sickness policy.
- Conduct yourself in a way that contributes to a healthy workplace.
- Work to Sercos governing principles and values by acting as a role model in every interaction you have with colegues and managers, internal and external stakeholders.
Preformance and key metrics
- Contribute to the delivery and achievment of all preformance measures, contactoutcomes and localy agreed targets including CDI's
- Addhere to the Serco Code of Conduct.
General
- Regulary read PSO's/ PSI's apropriate to your work duties
- Comply with all policys, procedures and legislation applicable
- When dealing with workplace concerns ensure all grievencess are reported to your line manager.
- Comit to personal training and development to ensure your skills and knowledge are maintained at the appropriate level.
Essential qualifications
- City and Guilds 706 level 1&2 or equivelent
- Level 4 award in managing food safety
- Level 4 award in managing HACCP for catering
- Relevent management qualifications
- e.g CMI
- ILM
Essentials
- Working in a people centered environment.
- Good working knowledge of a large catering operation, ideally with a minimum of 3 years experience in a similar post prefrebly within a custodial environment.
