Happy plaice Brighton is a vibrant and popular British m restaurant located in the heart of Brighton, known for its authentic and delicious English cuisine. Despite being a fish and chips restaurant, it is proudly run by individuals from the Bengali community, and we take pride in offering our guests a fusion of English, Bengali and Indian culinary influences. We are dedicated to providing an exceptional dining experience, and our passion for British and Bengali cultures reflects in every dish we serve. As we continue to grow, we are currently seeking an experienced and talented Head Chef, preferably from the Bengali community or the Indian sub-continent who speaks English, Bengali, Urdu or Hindi, to lead our kitchen team.
JOB PURPOSE:
∗ Designing and preparing traditional British dishes with a touch of Bengali influence by creating and implementing innovative menus.
∗ Ensuring the use of fresh and high-quality ingredients while maintaining control over the food preparation process.
DUTIES:
∗ Developing exciting and diverse menus that combine the richness of British food of considering seasonal availability and fresh local produce.
∗ Calculating meal costs, considering recipes, food, labour, and overhead expenses to determine menu pricing.
∗ Managing the procurement of foodstuffs and kitchen supplies by identifying reputable suppliers, negotiating prices, and maintaining inventory levels.
∗ Overseeing food preparation to ensure adherence to nutrition, presentation, and quality standards; making adjustments as needed.
∗ Approving food presentation and taste by evaluating prepared dishes' colour, texture, and garnishments.
∗ Controlling costs through effective inventory management and sourcing ingredients locally and seasonally where possible.
∗ Supervising kitchen staff, including recruitment, training, coaching, and performance management.
∗ Keeping up to date with culinary trends and innovations, attending workshops, and participating in professional societies.
∗ Maintaining a clean and safe kitchen environment, complying with national and local sanitation regulations, and providing training on proper kitchen equipment use and safety procedures.
∗ Fostering teamwork and collaboration among kitchen staff, promoting a positive and creative work environment.
∗ Organizing and conducting community training programs in English cuisine and representing.

REQUIRED SKILLS/QUALIFICATIONS:
Happy plaice Brighton values the essence of Mexican and Indian Subcontinent cultures and culinary heritages. Therefore, candidates from the Bengali community or the Indian sub-continent, with fluency in Bengali Indian Urdu and English, will be given preference.
The ideal candidate must have at least 2+ years of experience in a similar role within the hospitality industry, with a strong background in Food Sanitation, Menu Planning, Feedback Management, Customer Service, Team Leadership, Quality Assurance, Safety Protocols, Multi-tasking, Pricing, and Client Relationships.
Additionally, the candidate should possess a valid Health and Hygiene course completion certificate.
