Summary

The highly successful food led Oxenham Arms Hotel at South Zeal near Okehampton, only 25 mins from Exeter is seeking an experienced Head Chef to lead the kitchen - a dynamic and seasoned Head Chef with a proven track record in upmarket, trending cuisine with the ability to excel in a 30-45 cover high quality fresh food environment. You will be working in a modern kitchen with a great fun team of kitchen and front of house staff.

£35K per annum, 28 days holiday, great gratuity scheme, Pension.

REQUIREMENTS:
• Formal Chef qualification with a minimum of 3 years’ experience in a similar head chef position.
• Proven experience as a Head Chef in a quality mid volume restaurant environment.
• Essential skills covering Lunches, Cream Teas, Afternoon Teas, Evening Dinners, Sunday Lunch service and small occasional events up to 50 covers.
• Menu creation and design for the above.
• Proven culinary creativity and innovation. Wow presentation skills to support our AA Rosette food business.
• Strong decision making, organisation, time-management & effective communication skills along with food ordering from local suppliers.
• Excellent knowledge of culinary trends, techniques, and a passion for innovation including special dietary needs and healthier foods.
• Ability to consider the business aspects and cost control when creating new dishes;
• Precision and cleanliness;

RESPONSIBILITIES:
• Overseeing daily kitchen operations and ordering of stock
• Leading and inspiring the creation of innovative & exceptional new menu items;
• Ensuring optimal kitchen production efficiency, culinary standards and customer satisfaction
• Seeking feedback on menu items from customers and adapting menus accordingly;
• Overseeing staff training, scheduling, and performance evaluations.
• Ordering and purchasing of ingredients and maintaining necessary inventory and GP on each dish designed.
• Sourcing and managing relationships with high-quality suppliers to ensure the finest ingredients are used;
• Maintain a strong emphasis on cost control while delivering an exceptional dining experience.
• Maintain of all health & safety and 5 Star EHO regulations for employees restaurant cleanliness and food safety;
• Collaborate with the management team to optimize operational processes and achieve financial goals.
• Ensuring financial sustainability but controlling food wastage, rotating stock, optimising all ingredients effectively
