Employment Type: Full-time

Job Purpose:
The Production Manager is responsible for overseeing all aspects of bakery production at Delan Bakery, ensuring high-quality Nigerian-style breads are consistently produced to meet customer demand. This role requires specialist knowledge of traditional and modern bread-making techniques, process management, and quality control.
Key Responsibilities:
Manage daily bakery production operations, from raw materials sourcing (flour, sugar, etc.) to finished products (breads).


Develop and refine authentic Nigerian bread recipes to maintain product quality and authenticity.


Operate and maintain bakery machinery, including ovens, mixers, proofers, and upcoming automation equipment (divider and moulder).


Supervise bakery staff, scheduling shifts, training new team members, and ensuring compliance with health and safety regulations.


Monitor production output, inventory levels, and wastage, implementing continuous improvements to optimize efficiency.


Maintain strict adherence to UK food hygiene standards and health & safety protocols.


Collaborate with suppliers and internal teams to ensure timely delivery of raw materials and smooth production workflow.

Work closely with management on expansion plans, including scaling production capacity and integrating new technologies.


Keep detailed production records and assist with reporting as required for regulatory compliance and business management.


Qualifications and Skills:
B.Sc. in Food Science and Technology or related field.


Professional training/diploma in bread baking, preferably with experience in Nigerian or African bread varieties.


Proven hands-on experience managing bakery production, with knowledge of both traditional and automated baking processes.


Strong leadership and communication skills.


Ability to work under pressure and meet production deadlines.


Understanding of UK food safety and hygiene regulations.


Passion for quality and innovation in bakery products.
