Summary

Daffodil, set aboard the historic MV Royal Daffodil ferry, is Liverpool’s exciting new waterfront dining destination. As we approach our grand opening, we are looking for a talented Head Chef to lead our premium-dining Brasserie. This role offers the unique opportunity to helm a high-quality, seasonal, contemporary British menu encompassing daily lunch service, Sunday Roast and an à la carte dinner menu.You will also have the opportunity to influence breakfast and brunch, all-day dining small plates service, afternoon tea, event catering menus and special dining events.



Job Description:

The Head Chef will be responsible for leading all aspects of the food service aboard the vessel’s restaurant, encompassing two indoor dining spaces, an event space, and outdoor al fresco sun decks during the warmer months. This role is not just about managing a kitchen; it's about being at the forefront of one of Liverpool's most reputed hospitality offerings, with the ambition to achieve Michelin Guide and 2-3 AA Rosette standards. The Head Chef will work closely with Exec Head Chef Aiden Byrne to create an unparalleled dining experience.



Key Responsibilities:

Oversee the entire kitchen operation aboard Daffodil, ensuring the highest standards of culinary excellence.

Co-develop and execute seasonal, contemporary British menus for various dining services including breakfast, brunch, lunch and dinner.

Lead and inspire a team of culinary professionals, fostering a culture of creativity, collaboration and excellence.

Ensure the smooth running of food service across all dining areas, including special event catering.

Collaborate with Exec Head Chef Aiden Byrne to align the culinary vision and standards for the restaurant.

Manage kitchen budgets, inventory and supplier relationships.

Uphold stringent health and safety standards, maintaining impeccable kitchen hygiene.

Drive the restaurant’s ambition towards achieving editorial reviews and awards.

Engage in continuous professional development and stay abreast of culinary trends.



Qualifications:

Proven experience as a Head Chef in a premium dining or fine dining environment.

A strong portfolio showcasing expertise in contemporary British cuisine.

Experience in leading and managing a diverse kitchen team.

Ambition and drive to achieve high culinary standards, with a passion for achieving industry recognition.

Excellent leadership, communication, and organisational skills.

Creativity and passion for culinary arts.

Knowledge of current food trends and a commitment to using seasonal, high-quality ingredients.
