Summary
Main Purpose of the Job
To oversee a kitchen team, and provide food and meals as required from the menu.
To ensure that the catering provision is to a high standard and in accordance with all relevant food safety standards.
To provide cover on holidays and absences. General Duties of the Job
To be responsible and accountable for all aspects of the catering service to include but not limiting to;
Every aspect of catering within the location to be managed and a quality catering service to be delivered to the home in line with Cathena HealthCare Policies and procedures.
Fresh food to be made daily for the residents, minimising the need for pre-prepared food.
To carry out regular kitchen audits.
To be compliant with food safety, environmental health standards and CQC standards for food preparation.
To establish an appropriate seasonal menu that meets the nutritional needs of each resident.
To be responsive to any changes in the nutritional requirements of residents and to ensure residents nutritional needs are met.
To ensure that all allergy and dietary information is current and up to standard.
To monitor food and equipment on the satellite kitchens, including fridge temperatures.
Monitor meal service on each unit ensuring high standards are maintained at each meal.
Minimising waste when preparing meals and correct use of equipment.
Knowledge of principles and processes for providing customer and personal services. This includes meeting quality standards for services, and evaluation of customer satisfaction.
Resident satisfaction surveys to be completed.
Electronic purchase ordering from nominated suppliers, regular stocktakes and stock monitoring.
Ensure staff annual leave and shifts are covered when required.
Identify and request staff training where required.
Carry out supervisions, appraisals and any disciplinary actions for staff when required.
To work with kindness and consideration and to take pride in completing work to a high standard.
Hold regular staff meetings.
