This is an exciting opportunity to join one of London’s most competitive and high-profile corporate food environments.

Operating within a premium workplace environment, you will support the delivery of food to approximately 6,000 customers daily across multiple high-volume retail counters, including wok, grill, street food, deli, and balanced nutrition concepts.

This role focuses on retail food leadership at scale - delivering commercially viable, innovative food that competes with the wider Canary Wharf market. As Sous Chef, you will play a key role in driving menu innovation, operational consistency, and financial performance, while maintaining exceptional standards.

You will be part of the senior kitchen leadership team, balancing hands-on service with structured retail planning, ensuring each offer has a clear identity, strong gross profit, and consistent execution. This is an ideal role for a chef looking to progress and take the next step in their career.

The Role

Support the Executive Chef in leading all retail food operations across Level 3 and associated outlets

Take ownership of multiple retail counters, ensuring clarity of concept, consistency, and quality

Drive menu innovation through seasonal, trend-led concepts and effective ingredient cross-utilisation

Develop dishes that balance speed of service, margin, and customer appeal

Manage ordering, deliveries, and supplier relationships to ensure availability and cost control

Conduct weekly stock takes, analyse variances, and implement corrective actions

Drive gross profit performance through recipe adherence, portion control, and waste reduction

Maintain accurate use of systems (e.g. Saffron, Excel-based tools) for recipe costing, menu planning, and reporting

Lead high-volume daily service, ensuring speed, consistency, and excellent presentation standards

Train and develop the brigade in retail execution, batch cooking, and high-volume precision

Ensure full compliance with food safety, allergen management, and documentation standards

Collaborate with front-of-house and client teams to enhance the overall customer experience

About You

A strong Sous Chef or an ambitious Junior Sous ready to step up, with experience in high-volume, quality-driven environments

Background in premium corporate dining, contract catering, or branded retail food concepts

Proven ability to lead teams across multiple counters serving large volumes (1,000–6,000 covers daily)

A creative, trend-aware chef with strong commercial and financial awareness

Skilled in menu costing, margin management, and stock control

Experience using systems such as Saffron or similar menu/recipe platforms

A calm, organised leader with a hands-on approach and a passion for developing others

Ambitious, forward-thinking, and eager to progress within a large organisation
