Summary
As Kitchen Porter you will be responsible for maintaining the high standards of cleanliness, hygiene and the operational efficiency of the resort kitchens, food, and beverage, and back of house operations. You assist the Chefs where needed, providing a courteous and professional service as well as proper care, movement, and storage of all the kitchen equipment. You strive to exceed guest expectations and contribute to a positive guest experience, offering support in preparing the Moness Marquee, setting up, servicing, and breaking down for weddings, events, and gatherings.
As part of a close-knit team, you GUIDE THE WAY by leading through example and working collaboratively with fellow team members to deliver exceptional food and beverage service to every guest whether they are local and joining us for a meal or staying overnight and enjoying a hearty Scottish breakfast.
Role Responsibilities
You ensure the smooth day-to-day running of the back of house operation by maintaining safe and sanitary conditions in all the food service areas including the equipment. Perform cleaning duties as outlined in the kitchen cleaning schedules.
You take great care in washing crockery and glassware, kitchen utensils, pots, pans, and kitchen equipment using both manual and automated methods. Ensuring the kitchen surfaces, floors and workstations are kept clean and always sanitised. Keep storage areas, refrigerators and walk in fridges clean and tidy.
Assist chefs with any food preparation tasks, such as peeling, portioning and date labelling. BE YOURSELF and work closely with kitchen and front of house team to ensure dishes and equipment are available during service and for set up.
Maintaining an inventory of crockery, glassware and cutlery. Reporting any breakages and removing damaged items from circulation. Handling tableware with extreme care, ensuring all items are polished and free from blemishes.
Training will be provided of each cleaning product and where and how they are used so when handling COSHH (Control of Substances Hazardous to Health) products; ensure a thorough knowledge of any safety measure needed in the use of all cleaning materials.
Passionate about the environment, you maintain and dispose of rubbish and recycling in the respective bins. Approach all that we do with SIMPLICITY providing guidance, support, and motivation to assist junior team members. Encourage a positive and efficient work environment while ensuring teamwork and consistent high standards.
With creativity and thoughtfulness, the kitchen team DELIVER RESULTS time and again and ensure each guest’s individual dining experience, from the first meal of the day, a hot cooked breakfast through to supper with wine in the evening; is all lovingly prepared and with huge pride.
Role Competencies
Any previous experience within a high-volume or resort catering environment, or in a hotel or Restaurant would be advantageous. What is important is that you are dependable, you remain composed in a high-energy kitchen, contribute positively to teamwork and can maintain high standards during busy service. Attention to detail, with a professional yet personable manner and take pride in your presentation.
Highly organised with strong time management and problem-solving skills, able to prioritise effectively, work under pressure, and remain flexible to meet changing business demands, including peak periods and emergencies.
