An EC 853/2004 consultant is a food safety specialist who helps businesses that produce
products of animal origin (such as meat or sausages) comply with the hygiene and regulatory
requirements needed to obtain official approval from the local authority or Food Standards
Agency before operating. Their role is to review the factory layout, production processes,
and hygiene systems, develop or verify the HACCP food safety management system, prepare
all required documentation (SOPs, cleaning schedules, traceability and recall procedures),
and assist with the application for approved food establishment status. They also conduct
pre-inspection audits and guide the company through the approval process to ensure the
facility meets the legal standards set out in Regulation (EC) No 853/2004, which requires
