We have a fantastic new vacancy for a Sous Chef at Courtyard by Marriott Edinburgh West

Courtyard by Marriott Edinburgh West is a 160 bedroom hotel which is situated on the leafy Heriot-Watt University campus, with a state-of-the-art lobby and 'The Avenue' at the centre of it all. Courtyard by Marriott Edinburgh West is managed by Lighthouse Hotel Management, which is the operational arm of the Molo Hotel Group.

Job Description:

As the Sous Chef, you will play a key leadership role in our kitchen team. Supporting the Head Chef in the daily running of the kitchen and ensuring the smooth delivery of all food service periods. You will be working alongside a team of dedicated chefs and kitchen team members, driving the high standards of food quality, presentation and consistency while maintaining and positive and efficient working environment.

Responsibilities:


Kitchen Leadership: As Sous Chef, you will support the Head Chef in overseeing the day-to-day operations of the kitchen, helping to lead, motivate and develop the kitchen team. You will ensure all service periods run smoothly and maintain high standards across breakfast, lunch and dinner services.
Dining Experience: You will work alongside a passionate team that puts pride and care into every dish prepared. Your attention to detail and commitment to quality will ensure every guest receives a consistently excellent dining experience.
Passion for Excellence: In line with legislation and hotel policies and procedures, you will ensure the highest standards of food safety, food hygiene and allergen compliance are maintained. You will actively monitor kitchen practices, minimise cross-contamination risks and ensure the kitchen team follows all regulatory requirements.
Kitchen Standards: You will help maintain a clean, organised and compliant kitchen environment, ensuring all workstations operate efficiently and safely. You will support stock control, ordering, and food cost management while maintaining quality standards.
Team Development: Working closely with the Head Chef, you will help train and mentor junior chefs, supporting their development and helping to build a strong, collaborative kitchen team.
