This is not a routine restaurant management role.
Fulham Pier is one of London’s most exciting hospitality destinations, combining premium dining with major sporting occasions and high-profile events. We are looking for a proven leader to take full ownership of our brasserie operation and raise the bar even further.

The Role:
You will lead the brasserie with full operational accountability across both matchdays and non-matchday trading. This is a high-volume, high-visibility environment serving discerning guests, corporate clients and VIP audiences.
You will be a senior operational presence, trusted to run the business with authority and precision. From team culture to financial performance, the standards you set will shape the guest experience and the commercial outcome.
What You’ll Be Responsible For:
- Leading and developing a strong front-of-house team
- Delivering exceptional service during peak matchday and event periods
- Driving revenue while maintaining tight control of labour and costs
- Working closely with the Executive Chef to ensure seamless service delivery
- Protecting standards across presentation, service and guest engagement
- Responding to guest feedback and continuously improving performance
- Ensuring compliance across all health, safety and hygiene requirements
This role demands confidence, pace and attention to detail. It also offers genuine influence.
Who We’re Looking For:
You will already be operating at a senior level within a quality-led restaurant or hospitality environment.
You understand numbers as well as service. You know how to motivate experienced teams. You stay calm when trading peaks. You care about reputation and guest loyalty as much as margin.
Experience in high-volume, event-led or premium hospitality environments is essential. Presence, credibility and commercial instinct are equally important.
