  • Job Title: Head chef - Production
  • Location: HPL Head Office – CPU, North Fort Street, Edinburgh
  • Competitive Salary, plus bonus and flexible benefits fund
  • Holiday – 23 per annum
  • 40 hours per week, 5 out of 7 days.

The Role

As Head Chef – Production, you will:

Lead & Inspire

  • Manage and motivate the kitchen brigade within our central production unit.
  • Drive a positive, collaborative culture aligned with our Heritage Portfolio values.
  • Mentor and support chefs across the business to continually raise standards.

Deliver Culinary Excellence

  • Oversee all daily, weekly and monthly production activity.
  • Ensure food is consistently produced to the highest quality and specification.
  • Collaborate on menu development and culinary innovation.

Operational & Strategic Leadership

  • Develop and implement production plans to maximise efficiency and quality.
  • Maintain exceptional hygiene and safety standards across the CPU.
  • Manage purchasing, labour costs and waste using tools such as Human Force and Leanpath.
  • Ensure compliance with all statutory and company policies, including allergen management.

About You

You’re a dynamic and highly skilled culinary leader with:

Essential Experience

  • A strong background operating large, complex kitchen operations.
  • Proven experience delivering high-quality food for both small and large-scale events.
  • A track record of consistently high culinary standards.
  • IOSH Managing Safely & CIEH Level 3 certification.
  • Excellent organisational and financial management skills.
  • Strong leadership ability to inspire, motivate and develop teams.
  • Deep knowledge of all kitchen sections and large-volume production.

Desirable Extras

  • Experience with food management systems.
  • Experience driving food policy improvements and P&L performance.
  • A passion for innovation, new techniques and elevating the customer experience.
