As a Head Pastry Chef at Nobu Hotel London Portman Square, you’ll lead our pastry kitchen with artistry, innovation and genuine passion. From elegant afternoon tea to show-stopping event desserts, you’ll craft memorable experiences that embody the Nobu spirit. With a calm leadership style, a refined eye for detail and a love for modern pastry, you’ll guide your team to deliver flawless quality, consistency and presentation every day.

You will

  • Lead, inspire and develop the pastry team, fostering a collaborative and supportive kitchen environment
  • Create innovative pastry concepts, menus and seasonal offerings that reflect Nobu’s style and standards
  • Develop and implement a standout Afternoon Tea experience for the hotel
  • Ensure every dish is crafted with exceptional quality, precision and presentation
  • Manage budgets, food costs, labour planning and overall pastry profitability
  • Maintain all food safety, hygiene and health & safety requirements across the pastry section
  • Oversee stock control, ordering and supplier relationships, ensuring consistency and quality
  • Train and mentor chefs at all levels, encouraging growth and advancement
  • Collaborate with the Executive Chef on new ideas, tastings and creative development
  • Support marketing and Food & Drink initiatives with imaginative pastry activations
  • Communicate effectively with colleagues across all departments to ensure seamless service
  • Respond to internal and external audits and follow through on action plans
  • Ensure kitchens and workspaces remain clean, organised and operational at all times
  • Attend meetings, share insights, and contribute to the wider kitchen strategy
  • Uphold and embody Nobu values of Family, Crafted, Smile and Kokoro
  • Demonstrate a proactive, positive and hands-on approach, especially under pressure
  • Assist the wider kitchen team and support guest needs as required

You are a skilled pastry professional with experience in a senior kitchen role, ideally within luxury hotels or high-end restaurants. You thrive in a creative, fast-paced environment and take pride in leading a team through busy services with confidence and clarity. With strong organisational skills, a passion for flavour and design, and a genuine love for hospitality, you’ll elevate the pastry offering and contribute to the hotel’s reputation for excellence.
