About The Dry Spy
Step back in time to the roaring twenties at The Dry Spy Knowle – a 1920s Gatsby-inspired Art Deco cocktail bar where Prohibition-era glamour meets modern mixology. Since opening in March 2023, we've created an authentic speakeasy experience complete with live music every Friday and Saturday night, signature cocktails, and a warm community atmosphere.
Our dog-friendly venue is a hidden gem in Knowle, serving classic and signature cocktails alongside carefully selected wines in an intimate setting that seats up to 60 guests across 14 pre booked tables.
The Role
We're looking for passionate bartenders who thrive in a vibrant, fast-paced environment and love the art of cocktail making. Whether you're an experienced mixologist or a talented bartender ready to develop your craft, you'll be part of a close-knit team of 6 delivering exceptional table service in our unique 1920s-themed venue.
You'll craft everything from timeless classics like Old Fashioned and French 75s to our signature creations including the famous Naughty Lemonade, Smoked Old Fashioned and Gold Gatsby Passions – all while creating memorable experiences for cocktail lovers and live music fans.
Key Responsibilities
* Prepare and serve a range of classic and signature cocktails to our high standards
* Provide attentive table service in our intimate Art Deco setting
* Engage with customers in a friendly, professional manner that reflects our 1920s atmosphere
* Maintain comprehensive knowledge of our cocktail menu, wines, spirits, and bar nibbles
* Work collaboratively with the team during our busiest hours (5pm–12am)
* Support, promote & be available for shifts for live music events every Friday and Saturday night (9–11pm)
* Ensure the bar area is clean, well-stocked, and compliant with licensing regulations
* Handle transactions efficiently using our Square POS system
* Contribute to our welcoming, community-focused atmosphere
* Keeping bar dry , clean and keeping clear.
* Being available for key events such as Fri & Sat Night , NYE, Xmas Eve , Halloween , Private events , Open more hours in December
* 4 Weeks notice holiday requests
* Rate of pay reviewed after successful probationary period
* Staff training & Standards Training
* Mappal Training must be completed before 1st shift
* Uniform provided

What We're Looking For
Essential:
* Mixologist qualification required (for mixologist-level positions)
* Previous bartending experience in a cocktail bar or similar venue
* Strong knowledge of classic cocktails and mixology techniques
* Excellent customer service skills with a friendly, approachable manner
* Ability to work Thursday–Saturday evenings
* Reliable, punctual, and professional
* Team player with a positive attitude
* Personal licence holder (or willingness to obtain)
Desirable:
* Experience with table service
* Knowledge of wine and spirits
* Good customer service
* Passion for hospitality & understanding of industry requirements
* Experience working in live music venues
* Flair bartending skills - beneficial
