RESPONSIBILTIES
At Mollie’s, our Head Bartender is more than a cocktail expert they’re a guest experience champion. You’ll lead a vibrant bar team, delivering exceptional service, unforgettable drinks, and a warm, welcoming atmosphere that keeps guests coming back.
You’ll be a dynamic leader, passionate about hospitality and drinks, with a sharp eye for detail and a drive to exceed expectations. You’ll inspire and train your team to deliver consistently high standards, while ensuring every guest interaction is personal, professional, and memorable.
You’ll oversee the daily operations of the bar, working closely with the General Manager to implement new initiatives and drive performance. From curating drink menus and managing stock to coaching your team and engaging with guests, you’ll be at the heart of Mollie’s guest experience.
Guest-Focused Responsibilities
· Lead the bar team in delivering warm, engaging, and personalised service
· Ensure every guest receives consistent, high-quality drinks and hospitality
· Handle guest feedback professionally and proactively, turning issues into opportunities
· Create a welcoming bar environment that reflects Mollie’s brand and values
· Collaborate with FOH and kitchen teams to ensure seamless service across the venue
Operational Responsibilities
· Curate and maintain high-quality cocktail and drinks menus
· Manage stock levels, ordering, and supplier relationships
· Maintain compliance with health, safety, and licensing regulations
· Train and develop bar staff to meet service and performance standards
· Support the Bar General Manager with business improvements and team development
Requirements
· Minimum 1 year of supervisory experience in a similar role
· Proven ability to lead by example and motivate a team
· Strong interpersonal and communication skills
· Excellent planning, time management, and organisational abilities
· Calm under pressure, with a proactive approach to problem-solving
· Passionate about hospitality and delivering outstanding guest experiences
