Summary
The kitchens at the Grand Hotel are a hive of chefs using their culinary flair to create appetising dishes for all our guests. As Commis Chef you will be a key team player in the kitchen, helping to ensure the effective running of the department.
Key Responsibilities of the Role:
• Basic food preparation tasks such as chopping vegetables, preparing ingredients, and assisting with cooking under supervision and in accordance with established recipe cards and methods
• Ensure all dishes are correctly garnished before being sent to relevant outlets
• Ensure that all dishes are prepared in a timely manner as befits the venue
• Taste all dishes to ensure quality
• Ensure portion control plating instructions are adhered to
• Ensure mis-en-place and food products are labelled accurately and stored at all times
• Assisting more senior chefs and learning through practical experience.
• Have the desire to be trained to cover other sections of the kitchen as decided by the senior chefs
• Remain totally guest focused by consistently delivering excellent service with an informed, friendly and effective approach
• Be flexible to jump into any role within the kitchen when needed
• Contribute to creating a warm and welcoming environment for our guests and colleagues.
• Keeping workstations clean and ensuring equipment is maintained.
• Helping with stocktaking and inventory control.
• Ensure that wastage is kept to a minimum and preventative measures that incur wastage are fully understood
• Ensure work area is kept clean, hygienic and organised
• Ensure that all equipment/utensils in the section are correctly handled and maintained
• Ensure any equipment that is not safe is reported immediately to senior chef on duty
The Ideal Candidate
• Experience working within a busy kitchen in a similar role is essential, and it would be advantageous for this to have been in a hotel kitchen.
• We are looking for someone with a real passion for food and the drive to succeed in a new role.
• Outstanding hygiene skills are essential
• Certificate in elementary food hygiene would be desirable.
• Someone with exceptional communication skills and the ability to self-motivate
