Summary
Responsibilities
People
• To act as a role model to your team
• To bring fun to the workplace.
Customer Experience
• To ensure customer satisfaction across the estate
• To encourage and champion swift, efficient, knowledgeable service within the kitchen at Carlton Estate
• To drive seasonality across the product offering
• To engage with the wider estate team in the delivery of events
Operations
• Work in a timely but safe manner ensuring no equipment is left out or not correctly stored
• Support the team at peak periods with the washing or preparation of food items, plating or service aspects as required.
• Ensure all cleaning and kitchen items are correctly stored and put away avoiding any trip hazards.
• To ensure all crockery, cutlery and kitchen ware is cleaned to the desired standard and stored correctly.
Statutory
• To ensure the kitchen operates to a 5-star EHO compliance.
• Be aware of the allergens list and implications making sure that the processes are followed.
• Report immediately any variance in the temperature controls or concerns on the food storage areas.
• Assist Head Chef in ensuring all COOSH records are kept up to date.
Objectives
1 P&L
• To always minimise wastage and ensure everything possible is done to ensure Food GP % is maintained.
2 Operations
• To ensure all cleaning records are kept up to date.
• Undertake weekly and monthly deep cleaning of all areas within the kitchen
• Discuss with the manager any training requirements on the dismantling of any equipment to ensure safe cleaning and ability to reassemble.
• Ensure the cleaning of sharp or hot objects is done safely and have knowledge of the H&S risks associated with the tasks.
• To assist the Head Chef in managing and disposing of food waste.
3 Compliance
• Ensure all equipment is in good working order reporting any possible risks.
• Be aware of all areas of H&S compliance, monitoring checks, auditing are understood and upheld.
• Demonstrate an understanding of the use of cleaning chemicals and correct application and dosage.
• Undertake mandatory training as requested.
