Summary

Job Title: Chef Shift Lead

Location: HM Naval Base, Portsmouth

Job Type: Full time - 40 hrs per week

Job Summary:

As a Chef ShiftLead, you will oversee kitchen operations during your shift, ensuring food isprepared according to company standards while maintaining hygiene, safety, andquality. You will lead and support your team to deliver excellent food service,manage food safety compliance, and control operational standards.

Key Responsibilities:

  • Ensure all food is prepared and cooked in line with company recipe cards
  • Brief all food service staff on portion control prior to service
  • Report defects or issues promptly to the Manager
  • Maintain high operational and personal hygiene standards in compliance with the Food Safety Act
  • Ensure team compliance with Health and Safety Act and COSHH regulations
  • Oversee correct disposal and storage of all food items as directed by the Mess Manager
  • Monitor and ensure accurate recording of temperatures for fridges, freezers, hot cabinets, and serveries according to Sodexo’s Safety Management System (SEMS)
  • Ensure all foods served are held and served at the correct temperatures with proper documentation
  • Keep the kitchen area clean and hygienic at all times
  • Ensure adherence to handover, opening, and closing procedures with emphasis on safety and security
  • Lead and supervise the team in managing food waste using Leanpath
  • Continuously develop your own skills and knowledge within the role

Experience:

  • Proven experience working in a kitchen environment, preferably in a supervisory or lead chef role
  • Experience managing a team and coordinating kitchen operations during shifts
  • Proven track record of maintaining food safety and hygiene standards
  • Familiarity with health and safety legislation related to food service and kitchen environments
  • Experience using kitchen management systems or tools (e.g., temperature recording systems, food waste management like Leanpath) is a plus
