Summary
Job Description:
Hotto Potto is seeking a highly experienced Head Chef specialising in Sichuan cuisine to lead our kitchen team and oversee the development of our regional Chinese menu. The role requires exceptional leadership, deep culinary expertise, and a passion for authentic Sichuan flavours.
Key Responsibilities:
Lead the Sichuan section of the kitchen, managing workflow, training staff, and overseeing service standards.
Design and regularly update Sichuan menu offerings with traditional and innovative dishes.
Ensure food consistency, quality control, and portioning across service times.
Manage ingredient procurement, especially key Sichuan spices and components.
Enforce kitchen hygiene, safety, and allergen control in accordance with UK regulations.
Collaborate with management on seasonal promotions, cost optimisation, and staff development.
Requirements:
Over 15 years of professional kitchen experience, including at least 5 years in head chef roles.
Proven background in Sichuan cuisine, with menu development and team leadership experience.
Familiarity with UK food safety standards and kitchen best practices.
Fluent in Mandarin, with working knowledge of English preferred.
Strong communication, training, and cost control skills.
