Job Description:
We are seeking an experienced Skilled Chef specialising in Sichuan cuisine to join our team at DanDan Wimbledon. The successful candidate will be responsible for the preparation, cooking, and presentation of authentic Sichuan dishes, ensuring the highest standards of taste, quality, and consistency. The chef must have a deep understanding of traditional Sichuan cooking techniques, flavour profiles, and ingredients.
Key Responsibilities:
Prepare and cook a wide range of authentic Sichuan dishes, including cold starters, stir-fried dishes, hotpots, and dry pot dishes.
Develop and maintain recipes that reflect the traditional flavours of Sichuan cuisine, including signature dishes using techniques such as dry-frying, pickling, and chilli oil preparation.
Manage food preparation processes and ensure consistency in flavour, presentation, and portion control.
Monitor kitchen inventory and coordinate with suppliers for sourcing key Sichuan ingredients and spices.
Maintain food safety, hygiene, and kitchen cleanliness to UK Food Hygiene Standards.
Train and supervise junior kitchen staff where necessary.
Liaise with front-of-house team to ensure smooth kitchen operations and timely service.
Requirements:
Minimum 10 years of professional experience in Sichuan cuisine, with verifiable experience as a skilled chef.
In-depth knowledge of Sichuan cooking methods, traditional ingredients, and regional variations.
Ability to work independently and under pressure in a fast-paced restaurant environment.
Fluent in Chinese (Mandarin) to communicate effectively with kitchen team and head chef.
High attention to detail and commitment to quality.
Understanding of allergen control and UK food hygiene regulations.
