Summary
VENUE OVERVIEW:
High-volume luxury brasserie serving exceptional modern Scottish cuisine. This establishment maintains the highest standards of food and service, catering to both hotel guests and external diners. With 120+ covers and a reputation for excellence, we deliver memorable dining experiences in a fast-paced, quality-driven environment.
KEY RESPONSIBILITIES:
• Manage daily operations of a busy, high-volume brasserie
• Lead and develop a team of 15+ front-of-house staff
• Ensure seamless service delivery during peak periods
• Maintain exceptional standards across breakfast, lunch, and dinner service
• Drive revenue growth while maintaining quality standards
• Coordinate with kitchen team to ensure operational excellence
• Oversee stock management and supplier relationships
• Handle guest feedback and maintain satisfaction levels
REQUIRED EXPERIENCE:
• Proven track record in high-volume, quality dining establishments
• Experience managing teams of 10+ staff
• Strong commercial acumen and business understanding
• Excellence in guest relations and complaint handling
• Ability to maintain standards during peak service periods
