Job Description:

Hey! Are you an enthusiastic, food passionate and customer-oriented individual with skills in cuisine from the Southwestern and Central parts of Nigeria? Our Nigeria restaurant based in Nottingham seeks a Chef-De-Cuisine. You will be assisting the Head Chef with cooking and presenting high quality dishes within the specialty section. You will ensure the highest standards of food quality, taste, and presentation as planned daily.


Key Responsibilities:

Menu Development: Create innovative and authentic menus featuring a diverse range of majorly Southwestern and Central authentic dishes in collaboration with the team.

Cooking and Preparation: Expertly prepare and cook Nigeria cuisine, including signature dishes such as Efo Riro, Efo Egusi, Ewedu, Gbegiri, Ofada Rice, Ofada Sauce, Ikokore, Ebiripo, Ewa Aganyin, Eko, Ogi, Akara and Moinmoin and small chops.

Kitchen Management: Manage food preparation area and ensure safe handling of kitchen tools and equipment.

Quality Control: Ensure that dishes meet high standards of taste, freshness and presentation and conduct regular quality checks to maintain consistency.

Ingredients Sourcing: Source fresh, high-quality ingredients, spices and herbs essential for our authentic cuisine and ensures sufficient inventory levels are always maintained.

Food Safety and Hygiene: You should be prepared to uphold strict standards of food safety and sanitation adhering to all health codes and regulations to ensure a clean and safe kitchen environment.

Creativity and Innovation: Continuously explore new ingredients, techniques and presentation styles to enhance the restaurant’s menu and elevate the dining experience for our customers.

Menu Costing and Profitability: Monitor food costs, portion sizes, and wastage, working closely with restaurant Head Chef to optimize menu profitability while maintaining quality and customer satisfaction.


Skills Requirements:

Proven experience as Chef-De-Cuisine specialising in Southwestern and Central Nigeria cuisine, with a deep understanding of Nigeria culinary traditions, flavours, and preparation techniques.

Creativity and innovation in menu development, with a passion for displaying the richness and diversity of Nigeria cuisine.

Excellent communication skills and teamwork qualities in a high-pressure kitchen environment.

Excellent organisational and communication skills, with the ability to multitask, prioritise, and delegate effectively.

Commitment to food safety and hygiene standards, with relevant certifications preferred.

Flexibility and adaptability in a busy restaurant environment, with a focus on delivering exceptional culinary experiences to guests.



Education and Experience:

A formal qualification from a culinary school

A minimum of two (2) years of experience working as a Chef-De-Cuisine specialising in Nigeria cuisine in our busy restaurant and outdoor hospitality settings.

Demonstrated success in menu development, management of the kitchen and personnel and maintaining high standard of food quality, taste, and presentation.
