Programme name Level 2 - Commis Chef
Located between Otley and Ilkley, the Denton Park Estate consists of 2500 acres of idyllic land. An exciting contrast of woodland, moorland, grassland, arable land, a deer park and a Grade 1 listed Hall, give the Estate a unique environment in the heart of Yorkshire.

​Some of the current initiatives the Estate are developing include;

​Farmland

The estate is 2500 acres from the moorland tops of Nidderdale down to the river Wharfe, covering a wide variety of landscapes and habitats.

We are currently working with local and national experts to better understand the land through a series of studies that will determine the different makeup of soil, carbon, biodiversity and water quality that will help inform our next steps.

There are a number of initial projects that we shall soon be embarking upon, including re-wetting the moorland to aid the peatland restoration, some woodland expansions and the reduction of artificial additives on the land. Each season brings more opportunities for moving closer to our vision.

​The Hall and Coach-house

Denton Hall is a Grade I listed hall, designed by John Carr, who was the architect of many other notable houses, including the nearby Harewood House.

Job description
As an Apprentice Commis Chef, your role will include the following responsibilities:

Garnishing techniques
Prepares Regional Dishes appropriate to the pub menu, location and guest mix.
Working within a small team
Produce smart sustainable upscale gastropub food and some function work
Follow sustainable practises
Foraging and modern cookery techniques like preserving, fermenting and sous vide.
Working under a Estate Head Chef and Sous Chef for the Pub and Estate.
Control supplies and minimise wastage
Comply with company grooming and uniform standards.
Comply with timekeeping and attendance policies.
Ensuring all food items are produced to company specifications.
To become an apprentice, you must:

Be 16 or over

Not already be in full-time education

You can start an apprenticeship whether you’re starting your career, want a change or you're upskilling in your current job. You can have a previous qualification like a degree and still start an apprenticeship.

As an apprentice you’ll:

Have regular one to one sessions with a dedicated trainer either remotely or through visits to your workplace

Learn and train for a specific job

Get paid and receive holiday leave

Get hands-on experience in a real job

Study for at least 20% of your working hours

Complete assessments during and at the end of your apprenticeship

Be on a career path with lots of future potential

What is an apprenticeship?

An apprenticeship is a real job where you learn, gain experience and get paid. You’re an employee with a contract of employment and holiday leave. By the end of an apprenticeship, you'll have the right skills and knowledge needed for your chosen career.

Levels of an apprenticeship

Each apprenticeship has a level and an equivalent education level. You can start an apprenticeship at any level.

At the end of your apprenticeship, you’ll achieve the equivalent education level. For example, if you complete a level 3 apprenticeship, you’ll achieve the equivalent of an A level.
