Summary

During the apprenticeship the apprentice will gain and apply the following knowledge, skills and behaviours: - To provide patients, staff and visitors with an efficient and timely food and beverage service in a polite and courteous manner in order to achieve high standard of service, customers would expect and communicate effectively with patients especially when completing beverage service and be aware of specific dietary requirements - To ensure patients privacy and dignity is maintained throughout your work - To listen to customer feedback by listening to what the customer is objecting about, confirm the validity of the concern and raise these concerns with your manager - To carry out basic food preparation, packing, labelling and chilling of sandwiches and other food products, according to set recipes and procedures - To carry out basic cooking duties including producing food for breakfast service and back bar items for retail service, including packing and labelling of pre-prepared food commodities for patients including special diets - To be responsible for food and beverage services at ward level, prepare patients beverages and snacks and clearing up of patients beverage service in accordance to the work schedule - Collect menu cards from wards and departments in a timely fashion in readiness for the daily service - Provide ward based catering services and individual tray meal service, the regeneration process. Preparation for service, portioning and presentation of the meals and beverages, checking for specialist diets and liaising with nursing staff to ensure the correct items are provided - Support the chefs with basic cooking duties and assisting at service times to ensure food and beverages are served at the right time - To co-operate with other members of staff to ensure the efficient and safe operation of the department - Responsible for safe and secure storage of food stock for the ward pantrys checking dates and removing out of date stock. Assist colleagues to establish accurate food stock levels and report low stock levels to your supervisor for: food, consumables and cleaning products - To be responsible for undertaking ward fridge temperatures and recording all the information accurately to ensure compliance with food hygiene legislation, and Hazard Analysis Critical Control Points requirements (HACCP) - The apprentice will have an understanding of all products for sale, where they are located, brand names, place of manufacture and price - To operate cash register and alternative payment system in the retail areas, reconcile monies ensuring that standing operating procedures are applied and followed. - To observe and comply with Food Hygiene & Health and Safety Regulations at all times, Also to be responsible for adhering to all GMS policies, procedures and guidelines as appropriate - To wash up cutlery, crockery, utensils, equipment and containers, ensuring a clean and safe food and beverage service is available at all times. - Complete daily and weekly cleaning of all areas in accordance with COSHH and departmental schedules and specifications. Use appropriate equipment, chemicals and work methods, tasks to include cleaning of wall washing, floor maintenance, high cleaning, freezers and refrigerators etc via scrubbing machines and pressure cleaners. Ensure all equipment is cleaned and maintained in the appropriate manner and ensure compliance with food hygiene law. Follow cleaning schedules and document cleaning compliances - Clean and replenish the vending machines on a regular basis, suggest improvements to the service as trends change, completing all relevant documentation and sales information - Follow the correct use and care of equipment, reporting any damage, malfunction or maintenance requirements to the GMS help desk and advise the supervisor of action taken with the documented information on the job number - To report maintenance and equipment faults and building fabric issues to the GMS helpdesk and notify your supervisor in accordance with local procedure. Report all sightings of pests to the helpdesk coordinator in line with local procured and inform your supervisor - To manage the receipt of stock deliveries and ensure that delivered food and other items are thoroughly checked both physically and against delivery notes, stock rotated and stored in accordance with standard operating procedures - You will be supporting colleagues by accepting deliveries for the catering department receipt, store, issue and distribute all food, alcohol, non-food stocks, ensuring deliveries are correct and meet the relevant food hygiene legislation - Ensure all delivery documentation is kept securely, checked and discrepancies dealt with or escalated appropriately to ensure timely payment of invoices - Ensure that all instructions relating to the correct procedure for handling and storing of food for traditional cooking and cook freeze/chill systems are observed at all times following the HACCP documentation - Assist with the loading and unloading of vehicles, breakdown of bulk packs into the item of issue and remove all the waste into the correct waste stream - To attend any training courses identified as relevant to the post or in an effort to assist personal development - To comply with all Trust Policies, Procedures and initiatives - To report to a supervisor any accident/incident immediately it occurs - To maintain a clean, tidy and professional appearance - You will be expected to work on both sites of Gloucestershire Hospitals NHS Foundation Trust, (i.e. Gloucestershire Royal Hospital & Cheltenham General Hospital).
