Summary
As a Catfish processor, your duties will include:
• Euthanasia the fish is the quickest and most humane way, taking into consideration the resilience of the Catfish and limitations in availability of options
• Thoroughly washing the Catfish to remove any slime and skin residue
• Gutting the Catfish in a way that keeps the edible part intact
• Fish dressing ready for processing
• Bending the fish into the usual round shape, ready for drying
• Ensuring required temperature is maintain throughout the drying of the Catfish
• Package and label the fish according to HACCP
• Cleaning and tidy all work surface, tools, and equipment’s
