Summary

We are recruiting an experienced and creative Sous Chef for one of Dundee’s most talked about restaurants, Daisy Tasker, and our brand-new bar, Eighteen22. Join us at Hotel Indigo Dundee, a converted Jute Mill dating back from 1822.

Daisy Tasker Restaurant is our beautiful contemporary 75-seater eatery, a tribute to the heart and spirit of Daisy Tasker, a young mill worker who was much loved for organising social activities for her fellow weavers. Our bar, Eighteen22, keeping in with the buildings industrial heritage while blending a modern space with a nod to the past. Our menus are created to feature Scotland’s best ingredients and celebrate local suppliers.

What will I be doing?


As the creative Sous Chef, you will compliment and support the Head Chef in menu development in line with current market trends. You will be creative with the aim of converting our guests into diners while having an attractive offering for our local community.
You will oversee the Kitchen Operation in the absence of the Head Chef and assist with H&S Compliance, costs controls and team progression. You will foster positive relations through proactive interaction with guests, team members, contractors, and suppliers while ensuring the consistent production of high-quality food through all food outlets and meal periods.
We will NOT expect you to do all the hours under the sun. You will NOT be working more than 5 days a week. You will NOT have split days off. We WILL encourage you to have a work/life balance. What are we looking for?


Previous experience in a senior operational kitchen role in a high-volume high-quality environment.
Excellent knowledge of current food trends with the drive to constantly improve.
The ability to create menus that are both imaginative and profitable.
Excellent planning and organizational skills with the ability to multi-task and meet deadlines.
Proven track record of managing kitchen team.
Hotels experience not necessary but preferred.
Understand operating systems and support programs like Excel workbooks.
Have knowledge of procurement systems
A good knowledge of Health & Safety in the Kitchen and a substantial Food Hygiene Certification
