EDL is a brand development and creation company in the drinks industry with a key focus on whisky. We currently have 5 key brands (The Single Malts of Scotland, Elements of Islay, Port Askaig Single Malt Whisky, Black Tot Rum and Highland Nectar), all growing exceptionally well and distributed in over 20 markets around the world.

We are building a new distillery on the Island of Islay, named Portintruan, and recently acquired one of the most iconic distilleries in Speyside, Tomore Distillery, along with its mature inventory. Our aim is to create internationally recognised whisky brands from both distilleries in the coming years. About Tormore

Tormore distillery currently operates 5 days a week, with an output of 3.5mla annually, making it’s a very lively and busy site. The process operators work closely with our team of day operators to ensure both the smooth running of the distillery production function but also that of the bio-plant and warehousing facilities. In the last year, as well as spirit tanker despatching, there has been a reintroduction of cask filling on the site. Alongside this the warehouse operations are expanding to also meet our businesses needs as an active independent bottler, with regards cask management and re-racking operations.

Future plans for Tormore include a significant refurbishment within production and the introduction of a distillery visitors centre.

About Portintruan

The plans for Portintruan are ambitious, to say the least. Production will encompass a 3-storey floor maltings which will blend traditional methods with the modern, including automated turning equipment. The main distillery, initially set to operate 5 days a week, building up to 7 days, has a total capacity of just over 1mla annually. The focus will be on producing a number flavour driven whiskies, by using different yeast varieties, a mix of fermentation profiles alongside direct fired burners on the wash stills.

There is also the Pilot Plant on the site which will be a place of experimentation into different spirit types, including rum. With 2 pot stills, 2 retorts and a column there will be no limits to what can be made here.

The site will also host a modern visitor centre with an array of tasting spaces available, alongside a well-stocked bar and a restaurant showcasing the best of local produce.

Overall objective of role

Reporting to the Distillery Manager, the Production Manager will be responsible for overseeing all the production processes from grain in, to casks out, ensuring that quality standards are met, safety regulations are adhered to, and costs are kept under control. Effective leadership, strong communication skills, and attention to detail are critical in this role. Responsible for the production processes across all operational functions we require someone who will drive our organisational goals and objectives across health & safety, environment, quality, delivery, asset care, brand identity, morale, diversity and inclusion, cost management and continuous improvement.

Key Responsibilities

Working with our compliance team you will develop and manage the operational compliance systems. From inputting into our overarching policies and procedures in relation to Health & Safety, Quality, HMRC, Environment and Food & Feed Safety, through to evaluation and developing the site SOP’s and Risk Assessments, to ensure efficient, effective and safe production.

With a key role in the leadership team you will respond to findings, reports, readings and observations, and provide appropriate recommendations as well as develop and refine opportunities to improve efficiency, production quality, safety, and the environment through continuous improvement and cost containment, that contributes to the long-term success of the operation.

Working with your Assistant Manager in building, coaching and mentoring a strong team of motivated and educated staff in all aspects of day-to-day operation of all the functions required to produce top-quality whiskies and spirits. Develop, implement, and evaluate job specific skills training for each individual employees and work teams.

Manage day-to-day operations and production teams to achieve all required KPIs, performance metrics and cost objectives; ensuring team members are working efficiently and effectively whilst ensuring a safe and clean work environment.

Supporting the Distillery Manager in the preparation and administration of annual operations production plans, capital budgets and departmental budgets. Actively participating in identifying and evaluating cost savings opportunities. Oversee the departmental budgets and raw materials inventory to minimise costs and seek cost reduction opportunities. Continually monitor and review performance vs budgets, to ensure that all costs associated with production are carefully managed within budget.

You will be responsible for the co-ordination of asset care and contractor activities on site inc. working with the process/project engineer and finance on supplier tendering, undertaking contractor inductions and feedback processes, documentation management & scheduling of works. Assessing the suitability of Risk Assessments and Method Statements (RAMS) and preparation and management of work permits.

Act as a duty manager for the site and be able to take the role of incident controller and activate the site crisis plan, as required. The role also requires that you are available to the site team for out of hours production, breakdown and maintenance support as part of an on-call rota.
