The role of the Trainee Junior Chef will be working as part of a team to support the Chef and Sous Chef with all tasks necessary to ensure that kitchen operations run smoothly. Key responsibilities will include: ensuring the food preparation areas are clean and sanitised; washing utensils, dishes and cutting boards and storing appropriately; assisting with unloading delivered food supplies; organising and storing food supplies; checking sell-by dates and rotating stock and sweeping and mopping kitchen floors and disposing of kitchen waste. Assisting the Chef with the preparation of meals in a specific work section will be part of their day to day work. We will also give them exposure to the management responsibilities of the kitchen. This includes: setting up a weekly rota, managing staffing levels (where you balance the cost efficiency with optimum working capacity of each member of staff to meet the demand of the restaurant). One of the key areas of management is ordering supplies and we will give the trainees exposure to how to achieve the given targets of gross profit margins.
The Coconut Tree kitchens run a five station operation and we will make sure the trainees gain experience in all areas of this operation.
They will learn how to meet the statutory and food hygiene requirements that we need to adhere to and we will also give them the opportunity to undertake further training such as first aid, fire training and food hygiene levels 1-3.
Basic understanding of food hygiene would be favourable but not essential. Basic computer skills for ordering/stocktake are useful but training can be given. Educated to GCSE standard would be preferred. It would be desirable for the candidate to have obtained Level 2 / Basic Food Hygiene Certificate or Level 3 / Intermediate Food Hygiene Certificate or an industry recognised qualification such as City & Guilds, NVQ, BTEC. These are preferred but not essential. Cooking experience within a catering operation is preferred but not essential

Company pay at £6.75 (below age 21), £8.40 (age 21 to 22) & £8.95 (age 23 & 24)

As a business we are committed to training and developing all our staff, in order to help them achieve their potential in their current role and also to ensure their longer term career development. We have three experienced Group Head Chefs, who are also owners of the business. Each of our site operations is led by an experienced Kitchen Manager or a Head Chef. All new recruits will work closely with their Head Chef or Kitchen Manager on site. Our Group Head Chefs will provide further support and mentoring throughout their time with us.
From the outset, we will put in place a clear plan, which will include roles and responsibilities and agreed progression and development goals. The goals will include improving current skills, developing new skills, trying new tasks and undertaking any relevant training.
If these candidates have not done any food related training, we have the below available to them.
• Food Hygiene certificate level 1
• Food Hygiene certificate level 2
• Food Hygiene certificate level 3
• HACCP training & Certificate
• First Aid training
• Fire training
Furthermore, we will make sure we allocate a mentor for each and every recruit throughout the scheme and also hold regular HR meetings to review their progress and allocate any further support if needed.
