Summary

Our client has an amazing opportunity for a Senior Sous Chef to join an already well-established team in a beautiful mid-19th century hotel and restaurant! Our client is looking for an experienced, enthusiastic, and creative individual to join the team and help develop not only the menu but the team you will work in. Covering up to 80 covers across a beautifully set restaurant dining room and orangery within the beautiful Ludlow countryside.



Your role as the new Senior Sous Chef; -

- Manage the kitchen, service, and team in the absence of the head chef.
- Over see the food preparation and be in line with cover control for expected business volumes
- Must have fresh food experience.
- Modern British cooking.
- Help in the development of the menu by creating new menu items and improving current items on the menu.
- Ensure that all meals that leave the kitchen are of a high standard, are consistent with the last in terms of presentation and portions.
- Continue with the high cleanliness and hygiene standards by planning and scheduling the daily, weekly and monthly tasks which are in line with health and safety standards.
- Plan orders and maintain adequate stock levels in line with business volumes by preparing order checklists for all stock items.
- Resolve any problems, issues, or defects with the quality of stock coming in and food being prepared to the Duty Manager.
- Train and continually support the team within the kitchen and ensuring all communication with the team is understood.
- Oversee the work of the team to make sure standards are being met.
- Generating the rotas in line with business volumes.
- Ensure all holiday requests are processed and planned for with cover within the kitchen team.
- Ensure all team members understand and the value of their role within the kitchen
- Be up to date with all nutritional information and allergens and be able to create new allergen sheets when introducing a new menu or menu item.
- Encourage mutual team respect, communication and cooperation within the team and ensure all staff are treated equally.





In return our client is willing to offer; -

- Salary between £25,000.00 to £30,000.00 DOE.
