About the Role

We are seeking an experienced and passionate Chef specialising in authentic Jamaican cuisine to join our team. The successful candidate must have strong knowledge of traditional Jamaican cooking methods, seasoning, presentation, and cultural food standards.

The chef must be able to prepare high-quality Jamaican signature dishes with consistency, flavour, and authenticity.

Key Responsibilities

The chef will be responsible for:

Preparing, cooking, and presenting authentic Jamaican meals to a high standard.

Creating and managing menus based on traditional Jamaican cuisine.

Ensuring food is prepared safely, hygienically, and in line with food safety regulations.

Managing kitchen stock, ingredients, preparation schedules, and portion control.

Maintaining a clean, organised, and professional kitchen environment.

Supporting the development of new dishes, specials, and catering menus.

Ensuring excellent taste, presentation, and customer satisfaction.

Curry Goat

Oxtail Stew

Brown Stew Chicken

Ackee and Saltfish

Knowledge of Jamaican sauces, marinades, spices, and seasoning blends is essential, including jerk seasoning, scotch bonnet pepper, thyme, pimento, garlic, ginger, spring onion, and traditional browning methods.

Essential Requirements

Applicants must have:

Previous experience cooking authentic Jamaican meals in a professional kitchen, restaurant, catering, or hospitality setting.

Strong understanding of Jamaican food culture and traditional cooking methods.

Ability to work under pressure in a busy kitchen.

Excellent hygiene, food preparation, and kitchen management standards.

Good communication and teamwork skills.

Ability to manage ingredients, stock control, and kitchen preparation.

A Food Hygiene Certificate, or willingness to obtain one before starting.

A positive attitude, reliability, and pride in producing excellent food.


Desirable Skills

It would be beneficial if the applicant has experience in:

Catering for large events or buffet-style service.

Menu planning and costing.

Caribbean takeaway or restaurant operations.

Training or supervising kitchen assistants.

Preparing vegan, vegetarian, halal, or special dietary alternatives.


Salary

The salary for this position is £25,000 to £35,000 per year, depending on experience, skill level, and ability to deliver authentic Jamaican cuisine to a high professional standard.
