Operate within one of London’s most complex corporate food environments, serving approximately 6,000 customers daily across multiple high-volume retail counters, including wok, grill, street food, deli, and balanced nutrition concepts.

This role is focused on retail food leadership at scale, delivering commercially successful, trend-led food that competes directly with the Canary Wharf market. As Sous Chef, you will drive menu innovation, operational consistency, and financial performance across fast-paced service environments while maintaining premium standards throughout.

You will be part of the senior kitchen leadership team, balancing hands-on service delivery with structured retail planning to ensure each counter has a clear identity, strong gross profit performance, and consistent execution. This position is ideal for an ambitious chef looking to progress within a large and dynamic organisation.

The Role

Support the Executive Chef in leading all retail food operations across Level 3 and associated outlets

Take ownership of retail counters and concepts, ensuring consistency, quality, and a clear food offering

Drive menu innovation aligned with food trends and seasonality

Develop retail-focused dishes that balance speed of service, quality, margin, and customer appeal

Manage ordering, deliveries, and supplier relationships to ensure stock availability and cost control

Drive gross profit performance through recipe adherence, portion control, and waste reduction

Use IT systems, including Saffron and Excel-based planning tools, for recipe costing, menu planning, stock control, and reporting

Lead service across multiple counters, ensuring high standards of speed, presentation, and consistency

Train and develop the brigade in retail execution, batch cooking, and high-volume production

Ensure compliance with food safety, allergen management, and documentation standards

Work collaboratively with front-of-house and client teams to continuously enhance the retail offer and customer experience

About You

Experienced Sous Chef or strong Junior Sous Chef ready to step into a larger role

Background in premium corporate dining, contract catering, or branded retail food concepts

Experience leading teams within high-volume, quality-driven environments serving 1,000-6,000 customers daily

Creative and trend-aware, with strong commercial understanding

Skilled in menu costing, stock control, and margin management

Experience using Saffron or similar recipe and menu management systems

Calm and energetic leader with a passion for coaching and team development

Ambitious, forward-thinking, and eager to progress within a large organisation
