Crynodeb
Key Responsibilities:
• Prepare and cook traditional Thai sauces, including but not limited to:
o Nam Jim (dipping sauces)
o Curry pastes (Red, Green, Massaman, Panang, etc.)
o Tamarind-based sauces
o Peanut sauce
o Sweet chili sauce
o Fish sauce-based dressings
• Ensure consistency in flavor, texture, and quality of all sauces.
• Source and select fresh, high-quality ingredients, including herbs, spices, and aromatics.
• Maintain proper food safety and sanitation standards.
• Collaborate with the kitchen team to develop new sauce recipes and menu items.
• Adjust recipes based on seasonal ingredient availability.
• Train and mentor junior kitchen staff in Thai sauce preparation techniques.
• Manage inventory of sauces and pastes, ensuring proper storage and rotation.
Requirements:
• Proven experience as a Thai Chef, specializing in sauces and pastes.
• Strong knowledge of Thai culinary traditions, ingredients, and techniques.
• Ability to balance sweet, sour, spicy, and umami flavors authentically.
• Experience in making curry pastes from scratch (using mortar and pestle or industrial methods).
• Familiarity with vegetarian/vegan adaptations of traditional Thai sauces.
• Knowledge of food safety and hygiene regulations.
• Ability to work in a fast-paced kitchen environment.
• Culinary degree or relevant certification is a plus.
Preferred Skills:
• Experience in a high-volume restaurant or food production facility.
• Creativity in developing new sauce variations while maintaining authenticity.
• Knowledge of gluten-free and allergen-friendly sauce modifications.
